Lazy Speedy Prep

Stage 1

Place pork, garlic, bay leaves, peppercorns, sugar, soy sauce, vinegar, water, and oil in a large pot. Bring to a boil, then reduce heat to low and simmer for 20–25 minutes until pork starts tenderizing.

Stage 2

Add cubed potatoes to the pot. Simmer for another 15–20 minutes until potatoes are tender. Taste and adjust with salt or sugar.

Meal Prep & Storage

  • Cool completely before freezing to prevent ice crystals.

  • Portion into airtight containers (1.6 kg per set for 4 people).

  • Reheat gently — microwave or stovetop. Add a splash of water if sauce thickened too much.

  • Potatoes will stay reasonably firm if slightly bigger cubes are used.
