Ingredients
Cooking Steps
Marinate: Mix soy sauce, vinegar, and garlic with pork for at least 1 hour.
Brown the Pork: Heat oil in a large pot. Remove pork from marinade (reserve liquid) and brown in batches. Add onions and sauté.
Add Tomato Base: Stir in tomato sauce/paste and cook until fragrant.
Liquid & Simmer: Pour back reserved marinade and water. Boil for 2 mins, then cover and simmer for 35-45 mins until pork is tender.
Hard Vegetables: Add potatoes and carrots. Simmer 15-20 mins until tender.
Liver Spread: Mix liver spread with a ladle of hot sauce, then stir back into pot. Simmer 3-5 mins.
Bell Pepper: Add bell peppers (and optional raisins). Simmer 3-5 mins more.
Final Adjustments: Season with black pepper and adjust salt/sugar to preference.
Lazy Speedy Prep
Stage 1
Mix pork with soy sauce, vinegar, and garlic (30 mins).
Stage 2
Heat oil, brown pork, and add onions.
Stage 3
Add reserved marinade, tomato sauce, and water. Bring to boil, then simmer 40 mins.
Stage 4
Add potatoes and carrots (15-20 mins).
Stage 5
Add bell peppers and stir in liver spread (mixed with a bit of broth) for the final 5 mins.
Meal Prep & Storage
Resting time: Let the menudo sit for 10-15 mins after cooking; flavors develop significantly.
Freezing: Great for meal prep. Portion into containers once cooled completely.
Storage: Keeps well in the fridge for 3-4 days or freezer for 1 month.
Sauce consistency: If too thick, add a splash of water when reheating.
